
post work out breakfast/lunch: scrambled eggs whites over greens and topped with salsa and tabasco.

felt good.. loving the definition i am seeing!
Ingredients:
-1 can yellow corn, drained
-1 can white hominy, drained
-1 package shelled edamame, cooked
-1/2 1 yellow onion, diced
=1/2 1 red pepper, chopped
-4 tbs dijon mustard
-2 tablespoons extra virgin olive oil
-the juice of 2 lemons
To make:
-Mix the corn, hominy, edamame, onion, and pepper. Mix well.
-In a seperate bowl, whisk the olive oil, mustard, and lemon juice. Pour over salad and evenly distribute. Store in a refridgerator until ready to serve.
Easy peasy! Enjoy!
